FAQ

This is the information page about Lassar Ceramic Knives. It has been put in alphabetical order. Please feel free to email Lassar any other questions you may have using the contact us  page in the information section .

Bones

Ceramic knives are not to be used to cut meat with bones in it. No matter how careful you are eventually you will hit a bone and chip the blade. However we can repair your knife if you chip it , refer to sharpening section below.

Breakage

Obviously it is possible to break your ceramic knife. However it is not as brittle as normal ceramics found in the kitchen. If you drop it , most times it will bounce and sustain no damage. If it does land on the tip then the tip may break. This can be repaired by shortening the knife during the sharpening process. You will damage your knife by using it as a lever.

Do not use the flat of the blade to crush garlic.

Cleaning

White knives may becomes stained or discoloured after prolonged use. Clean with washing powder and a cloth or soak in a light bleach mix.

Chips

If you chip the blade of your knife it can be repaired , refer to the sharpening section below.

Corrosion

Ceramic is an inert substance that will not react with food acids. It will not rust so it can be exposed to sea water. This also makes it ideal for fishing as it can be left in the tackle box or locker on the boat even if it is not washed with fresh water after use.

Cutting Surfaces

You must cut on a plastic or wooden board. Cutting on hard surfaces such as granite ,glass , ceramic plates  etc will damage your knife

Dishwasher

It is not recommended to use a dishwasher to clean the knife. This is because the knife may be damaged by steel utensils during the washing process and also there is a danger of accidently cutting one's self when reaching into the dishwasher to remove items. Ceramic knives clean very easily ,a little dishwashing liquid and a quick wipe with a damp cloth is sufficient .

Do Not Cut

Meat with bones , jointing a chicken , frozen foods, large pieces of cheese, butternuts and gem squash.

Fish and Fishing.

Ceramic knives are perfect for fish preparation. Ideal for fileting fish and slicing finely for the preparation of sushi and similar dishes. You will be amazed at how finely you can slice fish with your Lassar. When fileting you may encounter bones. Very small ones can be cut but if you can see the bones rather use a steel knife to cut these.

I personally use the 3 and 4 inch paring knife with sheath for fishing on my fishing ski and jet ski. The main reason of course is corrosion. I have ruined many stainless knives by forgetting to remove from the hatch, a few week left with salt water on will rust most stainless steel knives. Also of course the ceramic knife stays sharp, stainless ones need sharpening on a regular basis. This is important because there is nothing more frustrating than trying to prepare a delicate sardine fillet bait with a blunt knife.  Experience has taught me that the cutting of these fillets is the most important part of the bait preparation and you need a razor sharp knife to do this correctly. Check out our Facebook page for tips on fileting.
